Mother's Day Musings

Hello! I haven't blogged since Monday which feels like a long time for me but I'm back to wish you a happy Mother's Day if you live in the UK. If you're lucky enough to have a loving and supportive mum like mine then Mother's Day is a good opportunity to show how much you care.

I took the opportunity to take my mum and nana out for a lovely lunch yesterday at The Muddy Duck which is a pub in a small village called Hethe. It was strictly no men allowed so it was nice to have some girly time together. We shared fish and chips, olives and foccacia and a BLT sandwich with chips. I've been to The Muddy Duck before and highly recommend it for delicious, posh pub food. You can check out their menu or make a reservation here.

Today I gave my mum her presents and some flowers. We got her the This Works Deep Sleep Spray, Elemis Milk Bath and Nails Inc NailKale in Kensington Mews. I'm looking forward to hearing if the This Works spray actually does help my mum sleep better...not that I ever have any trouble sleeping at night!

I also made some coconut flour almond cookies (partly for me, partly for her ;) ) which were made of: 1/4 cup coconut flour, 3/4 cup ground almonds, 1/2 cup maple syrup, 1/2 cup melted coconut oil, 1 tsp baking powder, a dash of cinnamon and a pinch of salt. I added some cacao nibs in which are like raw chocolate to add a bit of crunch, just because I didn't have any chocolate chips to hand. Very easy to make and very tasty too.

I think any 'holiday' is a good reminder to tell your nearest and dearest how much they mean to you, so even thought I don't say it enough, love you mum!
